Total Eclipse Coffee is proud to announce their three signature blends. The flagship product is called Full Spectrum, and offers a custom blend of two distinct beans roasted between light and medium to produce this complex masterpiece.
This blend of single origin coffee from Chiapas, Mexico and Congo, Kivu region of Congo are all organic sourced beans, and offer a very smooth but flavorful and complex cup.
Like the Rwanda Isimbi, this coffee is also grown near the shores of beautiful Lake Kivu (which straddles the border of the D.R. of Congo and Rwanda) but on the opposite / east side of the lake where volcanic soils, moisture from the lake, and a high elevation create a unique environment for coffee production, where bourbon varieties thrive.
This organic coffee has a full body, strong acidity, with notes of dark chocolate, raspberries and blueberries, and a distinguished profile, different to many coffees we have tried. For those who don’t enjoy acidic coffees, this may not be for you, but for those who do, you may have a friend in the Congo Kivu.
Uganda has had an interesting coffee history that has until recently, prioritized the growing of Robusta varieties over Arabica. Now, as infrastructure and production knowledge improve, specialty coffees from the Mt. Elgon region are building a great reputation amongst importers.
Mexican coffees are extremely popular due to their subtle flavors and range of body. Coffee is primarily grown in the southern-most state of Chiapas, where tropical conditions, higher altitudes, and volcanic soils create ideal growing conditions. Coffee was originally introduced to the Veracruz region the Caribbean, but nowadays, most coffee is produced in the Chiapas region. However, it is a long-standing debate on whether Chiapas or Veracruz has the best coffees. Typically, good Mexican coffee will be light bodied with mild acidity.
This organic coffee hails from the Chiapas region of southern Mexico, and is grown without pesticides, at altitude, and comes from several community farms in the region. Most of the area’s coffee producers are smaller farms and owned by families of indigenous descent. The beans are European Prepared (EP) to ensure minimal defects and are wet processed, meaning the skin / pulp of the cherry is removed from the beans after harvesting. This coffee is well balanced, has good delivery, a smooth body and sweet acidity. At darker roasts, the chocolate and nuttiness are more apparent, while medium roasts bring out more of the citrus and lemon notes and are more acidic. Those with good pallets can taste notes of peanut.
